                甑糕

                甑糕(甑,zèng。关中方音中为韵腹高元音,读作zìng,讹作jìng。)是西安和关中地区特有的※传统风味小吃,用糯米、红枣或蜜卐枣、红豆置铁甑上蒸制而成。

                甑糕小吃历史悠久。甑,是中国古代⊙一种非常古老的蒸器,有陶制、铜制、木制、铁制等,后经民间传承〖,将铁甑保留【至今,而用之蒸制的粘糕也别有风味。

                蒸甑︽糕的铁甑虽大,甑糕却柔软细腻。用糯米、云豆※和红枣蒸制而成,蒸熟后老远就能闻到糯米特有的香味。甑糕也很①好看,下面一层白饭渗入了枣色,呈一种晶莹鲜♂润的绛红色泽,上面※一层云豆,呈咖啡的褐色,再上层便是红枣,早已烂成暗红的枣泥,枣泥上又撒上◤一层碧绿的葡萄干,甑糕的色泽就更加丰富和分明。
